Tonight was Kenpo night. The easiest thus far! NO PROBLEM. Tomorrow is stretch and rest day. I went in for a massage this afternoon and Wednesday afternoon I have another massage therapy appointment.
I will survive.

… I finished the leg and back routine tonight. I think I pulled a hami.
It was pretty tough. I’m going for a great sports massage soon. Like, today (Sunday).

YOGA today. It was about an hour and 30 minutes. Not sure how long. It was the easiest thus far. This is the first time doing Yoga, so I am not sure how to compare it. But, it’s supposed to be extreme. I won’t claim to be great at it, but I was able to complete everything, including the “extreme” moves.
I’m still with it… No bar tonight though.
Maybe, just maybe, I will start the diet soon. Hmm. Maybe.

Let’s just say I put some preparation into tonight’s dinner; Spinach Stuffed Eggplant.
So, I sat down with my 4 year old, Owen and he asked for some 멸치 (myeol Chi). Okay, and I jokingly asked him if he wanted some 오이 김치 (cucumber kim chi) to go with it. He happily said, “Please Daddy.” Hmm. Anyway, I started to serve some of the dinner I prepared and he said, “No thank you.” Really? Hmm.. Well at least take a bite. He did and then said, “Nope, no thank you.” Okay.
So, I am eating my Spinach Stuffed Eggplant and Owen is eating the Myeol Chi and O-I Kim Chi. He begins to poke the little anchovies with his fork. I ask, “What’cha do’n?” He said, “Poking his eyes out.” Really? Hmm.. “What’cha gunna do?” He said, “Eat his eyes.” Okay.
So, I’m eating my Spinach Stuffed Eggplant while little Owen is popping and snapping the little eyes out of the Myeol Chi with his fork, then pinching them with his thumb and index finger and then sucking the eyeball from his fingers while here and there is the crunch, crunch, crunching the o-i kim chi.
Occasionally, he spontaneously spouts, “I’m eating his eyeball.” …uh, yeah. All the while, I’m eating my Spinach Stuffed Eggplant.
I guess we were both happy with our meal.

Spinach Stuffed Eggplant
1 large eggplant
2 cups whole-milk ricotta
1 cup blanched, chopped fresh spinach (stemmed, washed, blanched, and squeezed dry)
salt, white pepper, nutmeg to taste
parmesan cheese
tomato sauce
Slice the eggplant lengthwise into 1/4-inch slices. Salt the eggplant and let drain for 30 minutes. Rinse and dry the eggplant. Brush each side with olive oil, put on a single layer on a lined baking sheet and bake at 350 for 20 minutes. Cool.
Meanwhile, mix together the ricotta, spinach, seasonings, and cheese. Put a spoonful on one end of the eggplant slice, and roll up. Place the eggplant in a baking dish, put some tomato sauce on top, and sprinkle with more parmesan cheese. Bake at 350 for 20-30 minutes.

Hey guys! The shoulder & arm workout was definitely do-able. I made it through. Drank and ate to recover appropriately. Then I went out to Cafe Noir. Hey, I hear I should hang out in Annandale. ㅎㅎㅎ Any other suggestions?

Okay, I was supposed to start the program in 5 to 7 business days!
About 2 weeks later, I finally took the “before” pictures and I completed my measurements. I completed the pre-assessment workout and logged my results. Now, about another week later, I’ve completed the first two workouts.
The first workout was chest and back. It was a killer. The second workout was Plyometrics. Not easy, but I thought it was easier than the first. I still have to start the diet plan. That is really not easy!
Shoulders & Arms are due today… I’m hungry just thinking about it. Got Poi?
